Method

  1. Roughly chop carrot and mushrooms. Finely dice onion and garlic. Drain and wash lentils.
  2. Fill a saucepan with water, put the lid on and bring to the boil over a high heat. Add a pinch of salt, once the water is boiling, stir in the pasta. Cook pasta for 10-12 minutes.
  3. Heat oil in a pan, sauté onion and garlic for 2-3 minutes. Add mushrooms, mixed herbs and sauté for 4-5 minutes, season with salt and pepper
  4. Add carrots and lentils, mix well, add in tinned tomatoes. Let simmer on a medium heat for 10-12 minutes. Drain pasta, add to pan, fold into the mixture.
  5. Serve with nutritional yeast on top. Enjoy.
